I'm not going to pretend that I eat breakfast every day as every piece of nutritional advice I've ever read states you should. I'm not usually hungry for more than a big mug of hot coffee and a cigarette when I wake up and making something intricate is the furthest thing from my mind. Funnily enough whenever something happens that I deem special, I'm a big fan. I love going out to breakfast or making big birthday or guest breakfasts but for every day they're just not my thing. I'm trying to get into them a little more as I'm notorious for eating only dinner as a meal and then snacking on junk late at night so I'm hoping a stable breakfast and lunch will combat this problem.
I thought I'd share with you something really simple I've been enjoying as a quick lunch that I'm now moving to breakfast 3-4 days a week. It's simple, quick, sweet and nutritious so it's perfect for me. You just put all the ingredients in a bowl and enjoy; plus it really does only take a few minutes to put together unlike some recipes that actually take three times longer until you get used to preparing them.
I take two tablespoons of greek style natural yogurt in a bowl, add a handful of plain muesli on top, another two tablespoons of yogurt and 3-4 roughly chopped strawberries. I substitute the strawberries for raspberries, blueberries or banana sometimes but strawberries are my favourite. I use plain muesli as it's without the oils and sugars of most brands of granola and if I need a little extra sweetness a little honey or a tiny bit of sugar really helps. Most days I'll add in some chia seeds and mix them in to the yogurt but I've been all out for the past week.
You can make this breakfast as healthy as you like. My daughters like chocolate shavings (just a little bit of a bar of Dairy Milk grated) over vanilla greek style yogurt with their fruit or coconut yogurt with chocolate buttons as a sweeter treat. In the summer it's perfect as I find porridge or something on toast a little stodgy when the sun is shining.
This looks identical to my breakfast :) I have always kind of struggled to eat brecky (only had a coffee today) but I am working on it!

I always eat breakfast but it's usually just cereal or toast and some fruit. Nothing special. This looks lovely though!
