I am not a food blogger but I am a food lover. I love good fresh food but being on a tight budget we don't get a lot of it in our house. Eating well comes at a price and while there are ways to do it reasonably cheaply there are still thousands more products lining the shelves that are far cheaper. One of my favourite brunches, lunches or dinners is this - poached eggs on spinach topped soda bread toast. It's quick and easy, healthy, tasty, full of goodness and really filling. It's really as simple as it sounds.
1. First heat your pan and add in a tiny amount of oil or butter just to lightly coat the base.
2. Poach your eggs in a separate pan. To do this fill a pan of water about half full and heat until almost to the boil. Add in one or two teaspoons of white wine vinegar (it helps the egg whites congeal a little easier) and stir the water quickly until a little whirlpool forms. Quickly crack an egg into the whirlpool and leave to boil for about 4 minutes. You can just crack the egg into a still pan of water and nudge the egg whites closer to the yolk with a spoon too but I've always lived by the little whirlpool method.
3 You can pop your soda bread in the toaster but I like to fry mine in a tiny amount of butter until toasted (about 3 minutes) At this point I add in the spinach leaves around the edges. Once the spinach leaves start to wilt they're done so take them out if they're done before your bread.
This usually times up pretty well too so once you're done just plate it up with the bread on the bottom, spinach on top and egg on top of that. Sprinkle a tiny amount of salt and a little more generous helping of black pepper and you're done.
